docs: update Ubuntu to 24.04.4, VM 101 to Desktop edition

Correct point release from 24.04.1 to 24.04.4 throughout.
VM 101 changed from Ubuntu Server to Ubuntu Desktop 24.04.4
for a full GUI workstation environment via noVNC/RDP.
